Giffen goods and their impact on health

An article in the FT “One group of people cant substitute their way out of inflation”

made me think of the book I am ‘ploughing’ through since yesterday “What your food ate”

If giffen goods are being substituted by cheaper and thus most likely less nutrient food this will lead to health impacts which we will not be able to recover from financially; plus the inflation double whammy. SOTF requires looking into creating healthier cheaper substitutes.
